Either by inventing a model and trying to fit the observed reality into the model. Or if the model could not be conceived, then instead the objects and events in question has been counted, measured, sorted, filtered and compared against a number of variables in order to try to understand the underlying systematics and relationships.
Actually, by the use of Mathematics, humans are able to prove theories and make predictions that we don’t even have the mental capacity to comprehend afterwards - neither the models or the results.
Math can be our friend or foe, depending on the way it is being used.
